Here we explain our procesing methodes precisely.


Picking the ripe cherries taken place for both washed &Unwashed/Natural processes

Only the ripe cherries are harvested and they are picked individually by hand. Pickers rotate among the trees every eight to ten days, choosing only the cherries which are at the peak of ripeness. It usually takes two to four years after planting for a coffee plant to produce coffee beans that are ripe enough to harvest.We record the weight in the farmers logbook,which acts as a recipt forntheir daily delievery.

After Coffee bean collected from the farmers we spread out the coffee cherries on mesh table,and any under or overripe cheries are triaged out,After the triage,we place the coffee cherries in a large bucket and hoist them up onto a hook connecetd to a scale.

Natural/sun dried

The harvested cherries are usually sorted and cleaned, to separate the unripe, overripe and damaged cherries and to remove dirt, soil, twigs and leaves. This can be done by winnowing, which is commonly done by hand, using a large sieve. Any unwanted cherries or other material not winnowed away can be picked out from the top of the sieve. The ripe cherries can also be separated by flotation in washing channels close to the drying areas.The coffee cherries are spread out in the sun, on brick patios or on matting raised to waist height on trestles. As the cherries dry, they are raked or turned by hand to ensure even drying and prevent mildew. It may take up to 4 weeks before the cherries are dried to the optimum moisture content, depending on the weather conditions.

Hulling Machine

Unwashed/Natural Coffee cheries are depulping.

The dried cherries are stored in bulk in special silos until they are sent to the mill where hulling, sorting, grading and bagging take place. All the outer layers of the dried cherry are removed in one step by the hulling machine.

Washing Station

The method that used to process washed coffee.

Once the coffee passes through our station doors we separate the coffee by hill, and depulp the lot.The depulper, which is the machine that removes the coffee cherry from the coffee bean,is the only machine used at washing station. Every other step is done by hand or rubber . After depulping and quality separation,We ferment the coffee for 9 upto 12 hours overnights.This process loosens the mucilage around coffee seeds. After the setted times up,we agitate the coffee While they sing their stomping song.

Afterthe sing -and -stomp,the fermentation processis helted.We halte the fermentation by pushing the coffee into the channals that are flooded with fresh water.Her,our workers use rustic woden paddles to ensure clean parchement.

Drying Bed

After the coffee finish the final bath,we transfer it to pre dring tables.This tables are located Under shade so that the coffee does not dry too quickly and crack. While the coffee is dring,workers pick through it by hand to ensure that all defect are removed . Then,We move the beans to the dring tables,where they will dry in sun for anywhere from eight days to three weeks.To prevent mold growth,we frequently turn the coffee during these time.

Most fine coffee goes through a battery of machines that sort the coffee by the density of bean and by bean size, all the while removing sticks, rocks, nails, and miscellaneous debris that may have become mixed with the coffee during drying. First machines blow the beans into the air; those that fall into bins closest to the air source are heaviest and biggest; the lightest (and likely defective) beans plus chaff are blown in the farthest bin. Other machines shake the beans through a series of sieves, sorting them by size. Finally, a machine called a gravity separator shakes the sized beans on a tilted table, so that the heaviest, densest and best vibrate to one side of the pulsating table, and the lightest to the other.
